The Executive Chef will be responsible for managing all culinary operations at a large full-service hotel in a major city of Upstate, NY. This includes overseeing two full-service restaurants, room service, and a multi-million-dollar banquet and catering department. The ideal candidate will have extensive experience in high-volume hotel environments, particularly with large-scale events and mass production. They will lead a team of 60, including four chef leaders. The Executive Chef must be a self-starter, capable of taking ownership of their training, and able to hit the ground running.

Key Responsibilities:

• Manage kitchen operations for two full-service restaurants, room service, and a banquet/catering department.
• Lead a team of 60, including sous chefs and kitchen managers, ensuring top-quality food preparation and presentation.
• Oversee menu development, food purchasing, and inventory management, maintaining approved food and labor costs.
• Ensure compliance with health, safety, and sanitation standards, collaborating with the engineering and stewarding teams.
• Execute large-scale events, including 600-person seated dinners and multiple events happening simultaneously.
• Train and mentor staff, fostering a positive and efficient work environment.
• Conduct regular inventory counts, optimize stock levels, and manage vendor relationships.
• Develop and implement standard operating procedures, including those for Rational oven equipment.
• Collaborate with the General Manager on strategic planning and budgeting.

Required Qualifications:

• 8+ years of experience as an Executive Chef in high-volume, full-service hotels with multiple outlets.
• Proven experience managing large-scale events and mass production, including 600-person seated dinners.
• Strong leadership skills with experience managing large teams and multiple kitchen outlets.
• Excellent communication skills, both verbal and written.
• Ability to relocate to Syracuse, NY, with a compelling reason or connection to the area.
